Linus Pauling has written about it. I forgot what he said, but I know he did address the question of why this might have happened in evolutionary terms. For Marc, there is a chemist by the name of Karen Long who teaches at Diablo Valley College in Concord, Ca who worked with Linus Pauling on vitamin c and she might be able to help you.
